Recipe Notes
  1.  Cover the bottom of a 9 X 9 baking casserole dish with the sliced onions.
  2.  Dust the chicken thighs with salt & pepper, oregano, cumin, and garlic powder.
  3.  Place the chicken on top of the onions.  Add in the garlic.  Top with the chopped green chiles and add in the chicken broth.
  4.  Bake for 1 hour in 350° oven.
  5. Remove from oven and set  chicken aside on a plate and keep warm.
  6. Blend the chiles and onions in dish with immersion blender or blend in blender.  Top the chicken with the chile sauce, cheese, and cilantro.
  7.  Serve with warm flour tortillas or over Spanish rice.
